Lemon Pasta

Some days, I crave elaborately prepared meals that feel like a culinary treat. I lovingly pick the recipe, dig up the ingredients and spend hours slaving away until everything is perfection. On the other 364 days of the year, I just want something filling, fast and tasty. With it's 4 ingredients, this lemon pasta definitely fits the bill. I usually eat this as a light dinner if I had a high protein lunch, but it would make a great side dish as well.

Ingredients:
1 package spaghetti noodles
2-3 Tablespoons butter
1-2 lemons
fresh parsley
salt and pepper to taste

This dish is so easy, it virtually throws itself together. Cook the spaghetti according to package directions and drain. Put your stockpot back on the stove and melt the butter. Add in the lemon juice, salt and pepper to taste and then throw the noodles back into the pot. Add a handful of chopped parsley, give it a quick toss and serve it up!

Start to finish, you're looking at 15 minutes tops for this one. It's tasty, refreshing and it will make your tummy happy. Enjoy!
